How to Make Kutia
Instructions
- Rinse the wheat berries and soak them in water for 8 hours or overnight.
- Drain the soaked wheat berries and transfer them to a large pot. Add 2-3 cups of water and bring to a boil. Reduce heat, cover, and simmer for 1-1.5 hours or until the wheat berries are tender. Drain any excess water.
- While the wheat berries are cooking, grind the poppy seeds in a food processor or grinder until they are finely ground.
- In a large mixing bowl, combine the cooked wheat berries, ground poppy seeds, honey, chopped walnuts, dried fruits, slivered almonds, and salt. Mix well.
- Let the kutia sit for 10-15 minutes to allow the flavors to meld together.
- Serve kutia at room temperature as a delightful and symbolic dessert during your Ukrainian Christmas celebration. Enjoy!
