How to Make Boerenkool
Instructions
- Peel and quarter the potatoes, then place them in a large pot of cold, salted water. Bring the water to a boil and cook the potatoes until they are soft, about 20 minutes.
- While the potatoes are cooking, in a separate pot, add the finely chopped kale to boiling water. Cook for about 8-10 minutes until it's tender. Drain and set aside.
- In a small saucepan, heat the rookworst according to package instructions.
- Once the potatoes are cooked, drain them and let them sit for a few minutes to allow excess moisture to evaporate.
- Mash the potatoes using a potato masher or a ricer. Add the milk and butter while mashing to create a smooth and creamy consistency.
- Add the cooked kale to the mashed potatoes and mix well. Season with salt and pepper to taste.
- Serve your Boerenkool with a slice of rookworst and, if desired, a generous helping of gravy. Enjoy this Dutch classic!
