How to Make Boerenkool

Instructions

    Step 1
  • Peel and quarter the potatoes, then place them in a large pot of cold, salted water. Bring the water to a boil and cook the potatoes until they are soft, about 20 minutes.
  • Step 2
  • While the potatoes are cooking, in a separate pot, add the finely chopped kale to boiling water. Cook for about 8-10 minutes until it's tender. Drain and set aside.
  • Step 3
  • In a small saucepan, heat the rookworst according to package instructions.
  • Step 4
  • Once the potatoes are cooked, drain them and let them sit for a few minutes to allow excess moisture to evaporate.
  • Step 5
  • Mash the potatoes using a potato masher or a ricer. Add the milk and butter while mashing to create a smooth and creamy consistency.
  • Step 6
  • Add the cooked kale to the mashed potatoes and mix well. Season with salt and pepper to taste.
  • Step 7
  • Serve your Boerenkool with a slice of rookworst and, if desired, a generous helping of gravy. Enjoy this Dutch classic!
