- In a large pot of salted, boiling water, cook the lobster tails for about 8 minutes until the shells turn red. Remove them from the water, let them cool, and then cut the shells down the center.
- Remove the lobster meat, chop it into bite-sized pieces, and set aside.
- In a saucepan, melt the butter over medium heat. Add the chopped shallots and sauté until they become translucent.
