How to Make Lobster Bisque

- Boil a large pot of salted water. Plunge the live lobsters into the boiling water for 3 minutes. Remove them and let them cool.
- Cut the lobsters into pieces, removing the meat from the claws and tails. Set aside the meat and lobster carcasses.
- In a large pot, melt 2 tablespoons of butter over medium heat. Add the chopped onion and garlic, then sauté until they become tender.
- Add the flour and stir to make a roux. Incorporate the cognac and simmer until the mixture thickens slightly.
- Add the lobster or fish broth, the reserved lobster carcasses, paprika, salt, and pepper. Simmer for 30 minutes.
- Strain the mixture through a fine sieve to obtain a smooth broth. Discard the carcasses.
- In another pot, melt the remaining 2 tablespoons of butter. Add the lobster meat and briefly cook.
- Incorporate the lobster broth, then reduce the heat and let it simmer for 5 minutes.
- Add the heavy cream and heat without boiling. Adjust the seasoning according to your preferences.
- Serve the hot lobster bisque, garnished with chopped fresh parsley. Enjoy this creamy French delight!
