How to Make Pasta with lobster and mushrooms
Instructions
- In a large pot, place enough water and put it on the fire.
- Then add the salt, leek, celeri, 10 black peppercorns, bay leaf and thyme sprigs.
- Bring to a boil and add the tied lobster.
- Cook for 10 to 12 minutes until the lobster turns red.
- Remove the lobster from the water and let it cool, then the shell is broken and the meat is removed.
- Remove the intestine, which is located along its upper part.
- Cut the meat into cubes of approximately 3 centimeters. Book.
- Place in a separate bowl the liver or dark dough and the red mass that has the lobster inside the pasta.
- Clean the mushrooms thoroughly, remove the hard and dark part of the stems and cut the rest into thin slices.
- In a pan, place 3 tablespoons of butter to heat, add the mushrooms and cook for 10 minutes.
- Remove from heat and set aside.
- In a pot, heat 4 tablespoons of butter, add the onion and garlic.
- Cook until wilted, approximately 5 minutes.
- Add the flour, stirring constantly, cook for 1 minute. Add the pasta extracted from the lobster, stir very well and add the broth and wine.
- Bring to a boil and add salt, pepper and nutmeg.
- Cook for 7 minutes. Add the mushrooms and cook for 5 more minutes.
- Add the lobster, bring to a boil and put on medium heat.
- Cook for about 10 minutes until it thickens.
- When the sauce is boiling, bring to a low heat and add the cream, stirring for 2 minutes.
- Cook the pasta until al dente.
- Remove the pasta from the heat, remove the water and return it to the pot.
- At minimum heat, add the sauce and stir until it is all integrated into the pasta.
- Serve with some grated Parmesan cheese on top.
