How to Make Gnocchis
Instructions
- Peel and wash the potatoes.
- In a pot, with plenty of water, put them to cook.
- Once they are soft, a situation that you can verify by puncturing one with a knife.
- Take them out of the water and let them cool down a bit. They shouldn't be cold, just warm. Grind them and mix them with the yolk, then add the flour, pepper and nutmeg.
- Sprinkle a thin layer of flour on the counter. Pour the dough over it and knead it with your hand.
- Cut pieces of dough and stretch them with your hand into finger-thick tubes and cut them 1 to 2 cm long.
- Repeat this process with all the dough.
- Roll the balls over a fork or gnog to give them the characteristic shape.
- Cook the gnocchi in boiling salted water for 10 minutes or until they begin to float on the surface of the water.
- Accompany them with tomato sauce and grated Parmesan cheese.
