How to Make Noodles with lamb and bacon criadillas
Instructions
- Cut the chillies and scallions lengthwise.
- Wash the lamb criadillas and remove the membrane.
- Immerse them in cold water for 30 minutes; after the time has passed, remove them from the water and dry them with absorbent paper.
- Cut them into thin slices.
- In a large pot, heat the water and a teaspoon of salt; when it is boiling, add the noodles.
- Cook until al dente.
- Remove the water and set aside.
- Season and flour the lamb criadillas.
- Heat the remaining oil in the pan, fry the criadillas in batches until they are fully browned.
- Remove from heat and set aside.
- In a skillet, heat a tablespoon of oil; sauté the bacon in batches until golden brown.
- Place it on absorbent paper to remove excess fat.
- In the same pan, heat another tablespoon of oil together with the sesame oil; sauté the noodles with the chilli pepper, scallion and garlic, in batches until the noodles are completely browned.
- Mix the criadillas and the noodles, add them to the pan with the rest of the ingredients; sauté while stirring until the sauce starts to boil, add salt and pepper to taste.
- Remove from heat.
- Serve the noodles with criadillas and add the crispy bacon on top.
