How to Make Tomato soup
Instructions
- Make some cross cuts on the tips of the tomatoes. Put them in a pot of boiling water. Then remove the skin and stem from each one.
- In a pot, add the oil and when it is hot add the onion, garlic and carrot. Let them cook for a few minutes and then add the tomato, spices and a pinch of salt. When the water released by the tomato has almost evaporated, remove it from the heat.
- Put the mixture into a blender or food processor.
- Add some of the water in which you blanched the tomatoes at first to make it easier to peel.
- Return the soup to the pot and let it cook for another 5 minutes. Turn off the kitchen and rectify the salt if necessary.
- For the plating, garnish with a few basil leaves.
