How to Make Ratatouille Tart
Instructions
- Preheat the oven to 180°C (350°F).
- Roll out the puff pastry sheet on a baking tray lined with parchment paper and fold the edges inwards to form a border.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic and sauté for a few minutes until they become golden.
- Add the diced eggplant, zucchini, and bell peppers. Cook the vegetables until they become tender but not overly soft, stirring occasionally. About 10-12 minutes.
- Add the tomato slices and oregano to the vegetables. Continue to cook for another 2-3 minutes. Season with salt and pepper.
- Transfer the vegetable mixture onto the puff pastry base and spread it evenly.
- Bake the tart for approximately 25-30 minutes or until the puff pastry is golden and crispy, and the vegetables are soft.
- Allow it to cool slightly before cutting and serving. If desired, garnish with slices of fresh goat cheese and basil leaves.
- Serve your ratatouille tart warm or at room temperature. Enjoy!
