How to Make Butter Tarts
Instructions
- In a mixing bowl, combine the flour and cubed butter. Using a pastry cutter or your fingers, work the mixture until it resembles coarse crumbs.
- Add the cold water and mix until the dough comes together. Form it into a disk, wrap in plastic wrap, and chill in the refrigerator for 30 minutes.
- Preheat your oven to 375°F (190°C) and grease a muffin tin.
- In a separate bowl, whisk together the brown sugar, corn syrup, melted butter, egg, and vanilla extract until smooth.
- Roll out the chilled dough on a floured surface and cut it into 12 circles to line the muffin tin.
- Place a few raisins (if using) in the bottom of each tart shell.
- Fill each tart shell with the sugar mixture until about 2/3 full.
- Bake for 15-20 minutes or until the tarts are set and the pastry is golden brown.
- Let them cool in the muffin tin for a few minutes, then transfer to a wire rack to cool completely.
