How to Make “Drunken Cherry” Pie
Instructions
- We prepare the cake.
- We turn on the oven at 165° C.
- Beat the eggs together with the 2 yolks and the sugar with a mixer until they are fluffy.
- Mix the flour and cocoa. We add the flour in portions through a sieve to the beaten egg mass. Remove delicately, with a spatula. The dough is very fluffy.
- Line the bottom of a 22 cm mold with kitchen paper and cover the walls of the mold with a thin layer of butter.
- Pour the dough into the mold. Bake the dough in the preheated oven at 165 °C, with the fan, for 30-35 minutes. We open the oven and stick a wooden toothpick in the center. If the toothpick comes out with liquid dough, we bake a little more.
- Take the cake out of the oven and let it cool for 1 hour.
- We prepare the cherry filling. Cherries can be fresh or frozen.
- We prepare the cherry in advance. Take out the bones, pour in the liqueur and let them macerate. Combine the chocolate and butter in a bowl, and melt them in the microwave to make it homogeneous, add the condensed milk, mix well. Add the cherries and stir everything.
- We assemble the cake.
- Take the cake out of the mold, remove the baking paper and cut the upper part, a thin sheet (cover type).
- Cover the mold again with baking paper, and place the cake in the mold, without the lid cut off.
- Remove the crumb from the cake, so that the sides and the bottom remain.
- Add the crumbs, which we have removed from the cake to the cherry filling, stir.
- We fill the cake with the resulting dough, smooth it with a knife, cover the cake with the cut top. We leave the cake in the refrigerator for at least 5 hours.
- We prepare the chocolate icing.
- Combine chocolate, honey and butter in a bowl and melt everything in the microwave.
- We take our cake out of the refrigerator, remove the mold and glaze it. We decorated it with cherries. We chill the cake for 15-20 minutes to stabilize the icing.
