How to Make Gluten-free apple and cinnamon sponge cake

Instructions

    Step 1
  • Preheat the oven to 180°C. Line a medium-sized round cake pan with baking paper. Place the apple cut into cubes in a bowl and spray it with the juice of 1/2 lemon, this will prevent it from oxidizing. Combine the dry ingredients in a bowl: flour, baking soda, baking powder, sugar and cinnamon. Mix the eggs, the essence, the yogurt and the oil in another bowl. Add the wet ingredients to the dry ingredients and mix until combined. It's important not to overdo it.
  • Step 2
  • Add the diced apple, stir and pour the mixture into the mold. Garnish with the apples cut into slices. Sprinkle 1/2 teaspoon of cinnamon on top. Bake for 50 minutes or until a knife inserted in the middle comes out clean. Transfer the cake to a rack to cool completely. Place the icing sugar in a bowl and add lemon juice little by little, mix until you get the desired density and bathe the the cake.

  • The icing is optional but gives it a slight acid touch that makes it even more delicious.
