How to Make Rellenitos de plátano

Instructions

    Step 1
  • Peel the ripe plantains and cut them into chunks.
  • Step 2
  • Boil the plantain chunks in water until they are soft and tender, about 15-20 minutes.
  • Step 3
  • Drain the cooked plantains and mash them into a smooth consistency.
  • Step 4
  • While the mashed plantains are still warm, knead them with your hands to form a smooth dough.
  • Step 5
  • Take a small portion of the plantain dough and flatten it in your palm.
  • Step 6
  • Place a spoonful of sweetened black beans in the center of the flattened dough.
  • Step 7
  • Carefully fold the dough over the beans to encase them completely. Shape it into a smooth oval or ball.

  • Heat vegetable oil in a deep frying pan over medium heat.
  • Step 9
  • Fry the stuffed plantain balls until they are golden brown and crispy on the outside, about 3-4 minutes per side.

  • Remove the rellenitos from the oil and drain on paper towels to remove excess oil.
  • Step 11
  • While they are still warm, roll the rellenitos in a mixture of sugar and ground cinnamon to coat them evenly.
