How to Make Tarte Tatin
Instructions
- Peel, core, and slice the apples into quarters. Toss them with lemon zest and set aside.
- In a 9-inch ovenproof skillet or Tatin dish, melt the butter over medium heat. Add the sugar and a pinch of salt. Stir occasionally until the sugar starts to caramelize and turn golden brown. This may take about 10 minutes.
- Once the caramel reaches the desired color, remove it from the heat and add the vanilla extract. Be cautious as it may splatter. Stir quickly to combine.
- Arrange the apple quarters in a circular pattern in the skillet, fitting them closely together. Place any extra apple slices in the center.
- Roll out the puff pastry sheet to fit over the apples and tuck the edges down around the apples inside the skillet.
- Bake in a preheated oven at 375°F (190°C) for 30-35 minutes, or until the pastry is golden brown and crispy.
- Remove the Tarte Tatin from the oven and allow it to cool for a few minutes.
- Carefully place a serving plate over the skillet and, using oven mitts, flip the Tarte Tatin onto the plate, so the apples are now on top, and the caramel drizzles over them.
