How to Make Battered eggplants
Instructions
- Wash the eggplants and cut slices just over half a centimeter thick (no need to peel them).
- Place the slices in a large bowl and mix with the salt. Let it sit for 20 minutes and then drain, but do not rinse.
- On a small plate, mix the breadcrumbs and Parmesan cheese; on another, beat the eggs and on a third plate add the flour.
- First dip the eggplant slices in flour, then in egg and, finally, cover well with the mixture of Parmesan cheese and breadcrumbs.
- Fry in oil for a couple of minutes on each side until golden brown.
- Drain the battered eggplants on paper napkins, serve and sprinkle with additional salt if desired.
