How to Make Aubergine cake
Instructions
- Grease a cake pan and preheat the oven to 180°C.
- Wash and halve the eggplants lengthwise and place the pieces with the skin facing up in a tray lined with parchment paper.
- Roast the eggplants for 20 minutes or until they are cooked through and soft.
- While they are cooking, melt the chocolate in the microwave or in a water bath.
- Remove the eggplants from the oven and allow them to cool; then remove the pulp.
- Place the eggplant pulp, maple syrup and melted chocolate in a blender and make a smooth puree.
- In a large bowl, combine the bitter cocoa powder, flour, salt and baking soda.
- Pour the eggplant puree into the bowl of dry ingredients and stir until well combined.
- Pour the mixture into the cake pan and bake for 40 minutes at 180°C.
- Remove the eggplant cake from the oven and let it cool.
- Once it's cool to the touch, unmold and transfer to a plate.
- Refrigerate for at least an hour to make the cake compact and serve.
