How to Make Eggplants with turkey and vegetables

    Step 1
  • Wash the eggplants thoroughly, cut them in half and make some cuts on the flat side, add a little salt and let them rest for 30 minutes to remove the bitterness that characterizes them.
  • Step 2
  • Preheat the oven to 180° C with up-down heat if it is an electric oven and place the eggplants for about 25 minutes.
  • Step 3
  • In the meantime we are going to prepare the sauce, for this, place the chopped onion, leek and garlic for about 3 to 5 minutes in a pan with olive oil.
  • Step 4
  • Saute it and add the chopped carrot in small squares, cook for 10 minutes or until all the vegetables are soft.

  • Add the minced turkey breast, add the curry and salt to taste.
  • Step 6
  • Stir and cook another 5 minutes. Set aside the filling in a bowl.

  • Take the eggplants out of the oven, empty them with a soup spoon and add the eggplant meat to the filling.

  • Mix well and fill the eggplants with our mixture.
