How to Make Eggplant pâté
Instructions
- Puncture the skin of the eggplants with the tip of a sharp knife, without puncturing the pulp, and place them in the oven tray, preheated to 180°C, 50 minutes or until tender.
- When they are ready, remove from the oven and let them cool until you can handle them. Cut them in half and remove the pulp with a spoon. Have a bowl to place the pulp and then grind it well with a fork.
- Once the eggplant pasta is ready, continue with the seasoning, add the olive oil, lime or lemon juice, season and finally add the finely chopped coriander.
- Let it cool in the refrigerator before serving.
- To accompany it, we recommend making some toast with garlic oil, and that's it! Enjoy!
