- Place the flour in a bowl and mix with the salt. Add the butter and work with your fingertips.
- When a gritty consistency has formed, add the water. Integrate without mixing too much, stretch the dough and cover individual tartlet molds.
- Place aluminum foil over the tartlets and fill with raw beans to gain weight.
- Bake in the oven at 180°C for 10 minutes.
- Mix the eggs with the cream, add the salmon, parsley and half of the Parmesan cheese.
- Remove the aluminum from the molds and fill with the egg mixture. Bake at 160°C for 20 minutes or until firm.
- Unmold and finish with the remaining Parmesan.
