Instructions
- To start the cream we wash our vegetables well, put a splash of olive oil in the pot and when it is hot add the cut onion with its stem. Peel the pumpkin (reserve the skin and seeds) and also cut it into small pieces, so it will cook in less time. Salt and pepper and add water until it is almost covered. Cover and let it cook.
- We reserve the pipes and the skins. And when serving our cream we will toast them with a little bit of hot paprika to add in the form of a crunch on top of our pumpkin cream.
- When we see that the vegetable is tender, turn off the heat, cover the pot and let it cool down. Then we grind very well so that there are no lumps left.
- To make the crispy topping of the skin and seeds, all we have to do is cut the skin into thin strips and put it in a baking dish together with the seeds, add a touch of oil, pepper, salt and paprika and bake until they are golden and crispy. It can also be done in the microwave for about 2 minutes or roasted in a pan.
- We serve with a splash of oil and the crunch of your own skin and seeds. And now we have a 100% used and delicious pumpkin cream ready with zero waste! You can also accompany it if you want with a little crumbled cheese or feta cheese.
