How to Make Molokhia

  • If using fresh Molokhia leaves, wash and finely chop them. If using frozen, thaw them before cooking.

  • In a large pot, sauté the chopped onions and minced garlic in olive oil until they become translucent.

  • Add the chopped Molokhia leaves to the pot and stir well. Cook for about 5 minutes, allowing the leaves to wilt.

  • Pour in the chicken or vegetable broth. Season with salt and pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for about 15-20 minutes. The consistency should be like a thick soup.

  • While the Molokhia is simmering, rinse the rice and cook it according to package instructions.

  • For the lemony garlic sauce, mix minced garlic, lemon juice, and olive oil in a small bowl. Season with salt to taste.
