How to Make Egusi Soup
Instructions
- Season and boil the assorted meat until tender, then set aside.
- In a separate pot, heat palm oil on medium heat for about 5 minutes.
- Add chopped onions and sauté until translucent.
- Stir in the ground egusi and cook, stirring constantly, for about 10 minutes until it becomes golden brown.
- Add the blended scotch bonnet peppers and continue to cook for 5 more minutes.
- Pour in the water and bring it to a gentle boil.
- Add the cooked meat, seasoning cubes, and ground crayfish.
- Simmer for 10-15 minutes, stirring occasionally.
- Stir in the leafy vegetables and simmer for an additional 5 minutes.
- Season with salt to taste.
- Serve hot with fufu or rice for a delicious taste of Nigeria's Egusi Soup!
