Instructions
- Preheat the oven to 180°C. Grease and flour a cake pan.
- In a large bowl, sift together the flour, baking powder and baking soda.
- In another bowl, whisk the butter and sugar until creamy. Add the eggs and vanilla extract and beat until well blended.
- Add the dry ingredients to the butter mixture, alternating with the milk, and mix well.
- Pour the batter into the cake pan and bake for 30-40 minutes, or until the cake is golden brown and dry.
- In the meantime, prepare the pastry cream. In a small saucepan, mix the milk, sugar, flour, egg yolks and vanilla extract. Cook over medium heat, stirring constantly, until the mixture thickens and reaches the desired consistency.
- Let the cake cool and then cut it into two equal layers. Place one layer on a cake plate and spread the pastry cream on top. Cover with the other layer of cake and garnish with icing sugar or fresh fruit.
