How to Make Bibingka
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9x9-inch baking pan.
- In a large mixing bowl, combine the rice flour, sugar, and baking powder.
- In a separate bowl, beat the eggs and add the coconut milk, fresh milk, and melted butter. Mix well.
- Pour the wet mixture into the dry ingredients and stir until you have a smooth batter.
- Pour the batter into the greased baking pan.
- Arrange the sliced salted duck eggs on top of the batter.
- Bake in the preheated oven for about 30-35 minutes or until a toothpick comes out clean when inserted into the center.
- Remove from the oven and let it cool for a few minutes.
- Slice the Bibingka into squares, garnish with grated coconut, and serve warm. Enjoy!
