How to Make Lolly Cake
Instructions
- Crush the biscuits into small pieces, but not too fine.
- In a saucepan, melt the butter and sweetened condensed milk over low heat, stirring until well combined.
- Remove from heat and pour the butter mixture over the crushed biscuits. Mix until all biscuits are coated.
- Add the chopped lollies and desiccated coconut to the biscuit mixture. Stir until evenly distributed.
- Lay out a sheet of plastic wrap and transfer the mixture onto it.
- Shape the mixture into a log shape, about 25cm long, using the plastic wrap to help you roll and mold it.
- Roll the log in sprinkles if desired for a colorful finish.
- Wrap the log tightly in plastic wrap and refrigerate for at least 2-3 hours, or until it becomes firm.
- Once set, slice into rounds and serve. Enjoy your nostalgic New Zealand Lolly Cake!
