How to Make Jalebi
Instructions
- In a mixing bowl, combine all-purpose flour, besan, and baking soda.
- Add yogurt and mix to form a smooth batter. Let it ferment for 6-8 hours or overnight for better flavor.
- In a small saucepan, heat the saffron strands in ghee and add them to the batter.
- In a separate saucepan, make a sugar syrup by boiling sugar, water, cardamom powder, and rose water until it reaches a one-thread consistency.
- Heat oil in a deep pan. Pour the batter into a squeezable plastic bottle or a cloth cone with a tiny hole at the tip.
- Squeeze the batter into the hot oil in a spiral or pretzel shape and fry until it turns golden and crisp.
- Remove the jalebis from the oil and immediately dip them into the warm sugar syrup.
- Let them soak for a minute, then take them out, and serve your delicious homemade jalebis. Enjoy!
