How to Make Massaman Curry

- Heat the vegetable oil in a large pot over medium-high heat. Add the Massaman curry paste and stir-fry for about 1-2 minutes until fragrant.
- Add the meat (beef or chicken) to the pot and cook until it's no longer pink.
- Pour in one can of coconut milk and stir until the curry paste is well combined.
- Add the thinly sliced onions and cook for a few minutes until they become translucent.
- Mix in the cubed potatoes, roasted peanuts, kaffir lime leaves (if using), fish sauce (or soy sauce), tamarind paste, and sugar.
- Add the second can of coconut milk and enough water to cover the ingredients in the pot.
- Stir in the cinnamon stick, cardamom pods, star anise, and bay leaves.
- Reduce the heat to low, cover the pot, and let the Massaman Curry simmer for about 30-40 minutes, or until the meat is tender and the potatoes are cooked through. Stir occasionally.
- Taste and adjust the seasoning with more fish sauce (or soy sauce) and salt if needed.
