  • Generously season the filet mignon with salt and pepper on both sides.

  • In a large ovenproof skillet, heat the olive oil over medium-high heat. Add the filet mignon and sear it on all sides, about 2 minutes per side.

  • Transfer the skillet to the preheated oven and roast the filet mignon for 15 to 20 minutes for medium-rare (or longer depending on your preference).

  • Meanwhile, in the same skillet, add the shallots and sauté them until they become tender.

  • Deglaze the skillet by pouring in the dry red wine and simmer until it reduces by half.

  • Add the beef broth and continue to cook until the sauce slightly thickens.
