How to Make Chateaubriand Steak

- Preheat your oven to 180°C (350°F).
- Generously season the filet mignon with salt and pepper on both sides.
- In a large ovenproof skillet, heat the olive oil over medium-high heat. Add the filet mignon and sear it on all sides, about 2 minutes per side.
- Transfer the skillet to the preheated oven and roast the filet mignon for 15 to 20 minutes for medium-rare (or longer depending on your preference).
- Meanwhile, in the same skillet, add the shallots and sauté them until they become tender.
- Deglaze the skillet by pouring in the dry red wine and simmer until it reduces by half.
- Add the beef broth and continue to cook until the sauce slightly thickens.
- Stir in the butter to make the sauce velvety. Adjust the seasoning if needed.
- Remove the filet mignon from the oven and let it rest for a few minutes before slicing it into thick pieces.
- Serve the Chateaubriand with the shallot sauce on top, garnished with fresh parsley.
