How to Make Hollandaise stuffed pork
Instructions
- With the help of a knife, cut the boneless legs of the piglet in the shape of a bag, in order to be able to fill.
- In a bowl, mix the ground beef with the beaten egg, breadcrumbs, pickle, capers, salt and pepper.
- Heat the oven to 350°F — 180°C.
- Carefully insert this mixture into the piglet's legs, including the boiled eggs, which should be in the middle.
- Spread the pieces of butter on top and bake for an hour or until the meat is golden, crisp and tender.
- Serve the stuffed pork with mashed potatoes, apples and bacon (Dutch-style): Brown the bacon until crisp; drain and reserve the fat.
- Peel and finely chop 2 potatoes and 2 apples, in a little water, making sure that the puree cooks without burning, increasing small jets of water from time to time.
- Press until a cooked and homogeneous consistency is achieved.
- Add salt to taste and mix.
- When ready, add the bacon fat you set aside, mix and beat until it has the consistency of puree.
- Serve and spread the bacon.
