How to Make Börek
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the crumbled feta cheese, ricotta cheese, chopped parsley, and 1 beaten egg. Season with salt and pepper to taste. This is your filling mixture.
- Lay one sheet of phyllo pastry on a clean surface and brush it with a mixture of olive oil and melted butter.
- Place another sheet of phyllo pastry on top and repeat the brushing with the oil and butter mixture. Continue layering and brushing until you have 5 sheets stacked on top of each other.
- Spread half of the cheese filling evenly over the layered phyllo sheets.
- Continue layering and brushing the remaining 5 phyllo sheets on top of the cheese filling.
- Spread the remaining cheese mixture over this layer.
- Fold in the edges of the phyllo sheets to encase the filling and prevent it from oozing out during baking.
- Carefully roll the layered phyllo sheets into a log shape, like a jellyroll.
- Place the börek seam-side down on a baking sheet lined with parchment paper.
- Beat the remaining 2 eggs and brush the top of the börek with the beaten egg.
- If desired, sprinkle sesame seeds over the top for added flavor and texture.
- Bake in the preheated oven for 30-35 minutes or until the börek is golden brown and crispy.
- Allow it to cool for a few minutes before slicing and serving. Enjoy your homemade Turkish börek!
