How to Make Soul Cakes
Instructions
- Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the flour, sugar, mixed spice, and ground ginger.
- Add the cold, cubed butter to the dry ingredients. Use your fingertips to rub the butter into the flour mixture until it resembles breadcrumbs.
- In a small bowl, whisk the egg yolk and 2 tablespoons of milk together.
- Pour the egg yolk mixture into the dry ingredients and mix until a dough forms. If the dough is too dry, add the remaining milk.
- Roll the dough out on a floured surface to about 1/4-inch thickness. Use a round cookie cutter to cut out 12 circles.
- Place the circles on the prepared baking sheet and decorate each with a small piece of candied peel in the center.
- Bake for 15-20 minutes or until the soul cakes are lightly golden.
- Allow them to cool on a wire rack before serving. Enjoy your homemade soul cakes!
