How to Make Cendol

  • Blend the pandan leaves with water to extract the pandan juice. Strain the juice and set it aside.

  • In a mixing bowl, combine the rice flour and pandan juice to form a smooth batter.

  • Fill a large pot with water and bring it to a boil. Then, press the batter through a sieve or a cendol mold directly into the boiling water. The batter will form into green jelly noodles as it cooks. Once they float to the surface, they are done. Remove them with a slotted spoon and rinse with cold water. Set aside.

  • In a separate saucepan, combine the coconut milk, gula melaka, and a pinch of salt. Heat over low heat, stirring until the sugar is fully dissolved. Allow it to cool.
