How to Make Whole Wheat Carrot and Orange Pudding
Instructions
- Preheat the oven to 180°C and grease a pudding pan.
- In a large bowl, sift together whole wheat flour, baking powder and salt.
- In another bowl, whisk the coconut oil with the brown sugar until smooth. Add the eggs and vanilla extract and mix well.
- Add the flour mixture to the egg mixture and mix well. Add the grated carrots, orange juice and orange zest and mix until you get a homogeneous mass.
- Pour the dough into the pudding pan and bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool before unmolding and serving.
