How to Make Ayam Penyet
Instructions
- In a food processor, blend garlic, shallots, red chilies, and candle nuts until they form a paste. Add a bit of water if needed.
- Heat cooking oil in a deep frying pan. Deep fry chicken pieces until they're golden brown and crispy. Drain excess oil on paper towels.
- In a mortar and pestle, grind lemongrass, kaffir lime leaves, salt, and sugar to make the sambal. Adjust the seasoning to your taste.
