How to Make Steak Frites

- Preheat your oven to 200°C (390°F). Place a baking sheet in the oven to warm it up.
- In a large bowl, toss the cut potatoes with olive oil, salt, and black pepper. Spread them in a single layer on the preheated baking sheet. Roast in the oven for about 25-30 minutes or until the fries are golden and crispy, turning them occasionally.
- While the fries are cooking, season the ribeye steaks with salt and black pepper on both sides.
- Heat a skillet over high heat until very hot. Add the steaks and sear for 3-4 minutes on each side for medium-rare (adjust the time for your desired doneness).
- In the last minute of cooking, add the butter, minced garlic, and fresh thyme to the pan. Baste the steaks with the melted butter.
- Remove the steaks from the skillet and let them rest for a few minutes before slicing.
