How to Make Pelones rolls

Instructions

    Step 1
  • Preparing everything. I tend to have everything before cooking so everything is under control.
  • Step 2
  • In a pot, heat the oil, add the minced garlic and after a couple of minutes add the onion.
  • Step 3
  • When the onion starts to release juice, add two tablespoons of brown sugar and mix well. The idea is for it to be caramelized.
  • Step 4
  • When we see that the onion is fully integrated with the sugar, we add the meat together with the salt, cumin and smoked fumarol. When everything is integrated, add the wine, water and let it cook at a semi-low temperature.
  • Step 5
  • In a blender, add the tomato, the two garlics and a glass of water and proceed to liquefy. In a pot, the butter melts and when this starts to happen we add the liquefied tomato. Add the papyra, salt and basil. When it starts to boil we add the red wine and at a low temperature and always stirring we let the wine work its magic.
  • Step 6
  • In a bowl, add 2 cups of room temperature water and salt. Then we added the two cups of corn and began to make our dough. If it's too hard, add little by little the rest of 1/2 cup of leftover water. Finally we knead and we have our dough. Remember, water is always incorporated from less to more.
  • Step 7
  • We get our hands wet and take a cut of dough and make a bun and when it's ready from the center we make a cavity and fill. Repeat the process until all the dough is consumed.
  • Step 8
  • In a pot of boiling water, gently add our rolls and let them cook. When they start to float we retire.
  • Step 9
  • And done!!! We bathe them with our sauce and let's enjoy
