How to Make Eel Sushi

  • Cook sushi rice according to package instructions.

  • In a small saucepan, combine rice vinegar, sugar, and salt. Heat over low until the sugar dissolves. Let it cool.

  • While the rice is still warm, gently fold in the seasoned vinegar, being careful not to mash the grains. Let it cool to room temperature.

  • Slice the unagi fillets into even-sized pieces.

  • Cut nori into thin strips for securing the eel.

  • Wet your hands and shape small portions of sushi rice into oblong shapes.

  • Place a slice of unagi on top of each rice mound.

  • Wrap each piece with a strip of nori to secure the eel.

  • Optionally, dab a bit of wasabi on the eel.
