How to Make Chicken Adobo

- In a large pot, heat a bit of cooking oil over medium-high heat. Add the chicken pieces and cook until they are lightly browned on all sides. Remove the chicken from the pot and set it aside.
- In the same pot, add a bit more oil if needed, then sauté the onions and garlic until they become fragrant and translucent.
- Return the browned chicken to the pot, and add the soy sauce, white vinegar, bay leaf, black peppercorns, and sugar. Stir to combine.
- Pour in the water and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and simmer for about 30-40 minutes or until the chicken is tender and fully cooked. Stir occasionally.
- Taste and adjust the seasoning if necessary. You can add more sugar or vinegar to suit your taste.
