How to Make Cream pastries (Portugal)
Instructions
- Butter a 12-piece muffin tin
- Fill the molds into circular shapes with a pastry cutter or the edge of a glass and prick the base with a fork.
- Reserve in the fridge.
- Add milk, cream, lemon peel and cinnamon to the Thermomix glass. 10min/80°/speed 1
- Wait for it to temper and remove the lemon and cinnamon if we put it on a stick and let it temper.
- Turn on the oven at 220° and add the sugar, egg yolks, flour and cornstarch to the glass. 5 sec/speed 4
- Cook 7min/90°/speed 4
- Retrieve the mold and fill the tartlets.
- Bake 15-20 minutes or until the cream is golden brown at 220°
- Remove from the oven, let it cool and sprinkle with icing sugar before serving.
- And that's it.
