How to Make Rouladen
Instructions
- Spread beef slices on a cutting board and season with salt and pepper.
- Spread a layer of mustard on each slice of beef.
- Place a slice of bacon, onion slices and pickle slices in the center of each slice of beef.
- Roll up the slices of meat, making sure the filling is well sealed inside.
- Heat the vegetable oil in a large pot over medium-high heat.
- Brown the beef rolls on all sides until well seared.
- Add the beef stock, red wine, bay leaves and thyme to the pot.
- Reduce the heat to low, cover the pot and simmer for about 2 hours or until the meat is tender.
- If you want a thicker sauce, you can remove the meat rolls from the pot, add the flour to the cooking liquid and cook over medium heat until the sauce thickens.
- Remove the bay leaves and thyme from the sauce. Taste and adjust seasoning with salt and pepper as needed.
- Serve the Rouladen hot with the sauce on top, accompanied by mashed potatoes or Knödel (potato dumplings) and sauerkraut.
