How to Make Gravlax
Instructions
- Heat the vegetable oil in a large griddle or frying pan over medium-high heat.
- Add the sliced meat (chicken, beef, or mutton) and cook until it's no longer pink and starts to brown. Remove it from the pan and set it aside.
- In the same pan, add more oil if needed, and then add the chopped onions and minced garlic. Sauté until the onions become translucent.
- Add the green chilies and grated carrot to the pan. Cook for a couple of minutes until the carrot softens.
- Stir in the sliced bell pepper, cabbage, and chopped leeks or spring onions. Sauté for another few minutes until the vegetables are slightly tender.
- Return the cooked meat to the pan and mix it with the vegetables.
- Add the curry powder, turmeric powder, cumin powder, chili powder, salt, and pepper. Stir well to coat the meat and vegetables with the spices.
- Add the chopped roti bread to the pan. Use a pair of spatulas or knives to chop and mix everything together. This creates the signature "kottu" sound.
- If using eggs, push the mixture to one side of the griddle and crack the eggs into the empty space. Scramble them until they're cooked, and then mix them into the rest of the ingredients.
- Drizzle soy sauce and ketchup over the kottu roti and continue to stir-fry for a few more minutes, ensuring everything is well combined.
- Taste and adjust the seasoning if needed.
