For a quick and light lunch and to invite my special friend, I'm going to teach you how to prepare a delicious and healthy Onion Soup.
You can place slices of bread and soak them in the soup and if you like diced cheese.

How to Make Onion soup.
Instructions
- Peel and julienne the onions.
- Melt the butter with the olive oil in a pot.
- Add the onions and a little salt.
- Cover the pot and cook the onions for about 30 minutes over low heat, stirring occasionally so that they don't stick.
- Add the flour and cook for a couple of minutes.
- Add the brandy and cook for a few minutes to evaporate the alcohol.
- Add the chicken stock and cook for 30 minutes over low heat.
- Cut the half loaf of bread into twelve slices a finger wide.
- Place the slices of bread on a tray and drizzle on both sides with a little olive oil.
- Bake the slices of bread at 180ºC for 5 minutes.
- Turn the slices over and bake for 5 more minutes.
- Place the onion soup in oven-proof containers, place three slices of bread in each bowl and sprinkle with the gruyere cheese.
- Bake for about 3-5 minutes at 220ºC.
