How to Make Tom Yum Soup (Thai Spicy and Sour Soup)

- Add lemongrass, galangal or ginger, kaffir lime leaves, and Thai chilies. Simmer for 5-10 minutes.
- Add shrimp and mushrooms. Cook until shrimp turns pink.
- Stir in cherry tomatoes and shallots.
- Season with fish sauce, lime juice, and sugar.
- Taste and adjust the flavors as needed. It should be spicy, sour, and slightly sweet.
- Remove from heat, remove lemongrass and lime leaves.
- Serve hot, garnished with fresh cilantro leaves.
