How to Make Borscht
Instructions
- Heat the vegetable oil in a large soup pot over medium heat. Add the chopped onion and sauté until it becomes translucent.
- If using beef, add it to the pot and brown it on all sides.
- Stir in the grated beets, carrots, and potatoes. Cook for about 5 minutes, allowing the vegetables to soften.
- Pour in the broth, add the bay leaves, and bring the soup to a boil. Reduce the heat to a simmer and cook for 15-20 minutes, or until the vegetables are tender.
- Add the shredded cabbage and cook for an additional 10 minutes.
- In a separate bowl, mix the tomato paste and vinegar, then add this mixture to the soup.
- Season with salt and pepper to taste, and add the minced garlic. Simmer for an additional 5 minutes.
- Remove the bay leaves and discard them.
