- First we cook the sausage meat. To do this, we put it directly in the pan and since it is such a fatty meat, it is cooked with its own juice. Mine butcher shop for them and I ask them to vacuum pack it for me and I use it for several things, including this! Cook the meat for a few minutes with the two tablespoons of fried tomato and a little salt, and set aside
- Fry the quail eggs in a little sunflower oil without having to cook them too much so the yolk won't curdle, a couple of minutes is enough.
- Now we heat the wheat tortillas in a pan back and forth, put the sausage meat, a very light drizzle of honey, the egg, a slice of lime on top.
- We finished the recipe with lime zest and some coriander leaves... And let's enjoy!
