  • In a bowl, combine the dried guajillo chilies, pineapple juice, white vinegar, garlic, chopped onion, ground cumin, dried oregano, smoked paprika, salt, and pepper. Let the mixture soak for about 15 minutes to soften the chilies.

  • After soaking, transfer the mixture to a blender and add the achiote paste and orange juice. Blend until you have a smooth marinade.

  • Place the thinly sliced pork shoulder in a large resealable bag or a shallow dish. Pour the marinade over the pork, ensuring it's well coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, or ideally overnight for maximum flavor.

  • Heat a grill or grill pan over medium-high heat. Brush the pineapple slices with vegetable oil and grill them for about 2 minutes on each side until they have grill marks. Remove and chop into small pieces.
