How to Make Pozole

Instructions

    Step 1
  • In a large pot, add the chunks of pork shoulder, chopped onion, minced garlic, dried oregano, ground cumin, salt, black pepper, and chili powder (if using).
  • Step 2
  • Pour in enough water to cover the pork by about an inch. Bring the mixture to a boil, then reduce the heat to a simmer. Let it cook for about 45 minutes to an hour, or until the pork is tender.
  • Step 3
  • While the pork is simmering, place the dried guajillo and pasilla chiles in a separate pot and cover them with water. Bring to a boil and let them simmer for about 10 minutes until they soften. Drain and set aside.
  • Step 4
  • Once the chiles are cool enough to handle, blend them with a cup of broth until you have a smooth chile paste.
  • Step 5
  • When the pork is tender, add the drained and rinsed hominy corn, remaining broth, bay leaf, and the chile paste you prepared. Stir well and let it simmer for another 30 minutes to allow the flavors to meld.
  • Step 6
  • Taste and adjust the seasoning with more salt and pepper if needed.

  • To serve, ladle the pozole into bowls and let everyone customize their bowls with shredded cabbage, sliced radishes, lime wedges, diced avocado, and any additional toppings they prefer.
