  • In a large mixing bowl, combine the lamb pieces, minced garlic, dried oregano, dried thyme, lemon juice, olive oil, salt, and pepper. Mix well, ensuring the lamb is coated with the marinade. Cover and refrigerate for at least 2 hours, or preferably overnight.

  • Preheat your oven to 180°C (356°F).

  • Place the marinated lamb portions in the center of a large piece of parchment paper or aluminum foil.
