How to Make Greek Lamb in Parchment
Instructions
- In a large mixing bowl, combine the lamb pieces, minced garlic, dried oregano, dried thyme, lemon juice, olive oil, salt, and pepper. Mix well, ensuring the lamb is coated with the marinade. Cover and refrigerate for at least 2 hours, or preferably overnight.
- Preheat your oven to 180°C (356°F).
- Place the marinated lamb portions in the center of a large piece of parchment paper or aluminum foil.
- Surround the lamb with the potato chunks, onion slices, and tomato slices. Drizzle with white wine, and place a sprig of rosemary on top of each portion.
- Seal the parchment paper or aluminum foil tightly to create a packet, ensuring no steam can escape.
- Place the packets on a baking sheet and bake in the preheated oven for about 2.5 to 3 hours, or until the lamb is tender and falls off the bone.
