How to Make Kabsa
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and garlic and sauté until they become translucent.
- Add the chicken or lamb pieces and brown them on all sides. Stir in the Kabsa spice mix and continue to sauté for a few more minutes.
- Add the chopped tomatoes, carrots, and red bell pepper. Cook for about 5 minutes until the vegetables start to soften.
- Rinse the Basmati rice under cold water until the water runs clear. Add the rice to the pot and stir to combine with the other ingredients.
- Pour in the chicken or beef broth, and season with salt and pepper. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for about 20-25 minutes, or until the rice is cooked and the meat is tender.
- While the Kabsa is cooking, you can prepare the optional garnishes. In a separate pan, lightly toast the slivered almonds until they turn golden, and plump up the raisins by soaking them in hot water.
- Once the Kabsa is ready, fluff the rice with a fork and transfer it to a serving platter. Top with the toasted almonds, plumped raisins, and fresh cilantro or parsley.
