How to Make Plov

    Step 1
  • Rinse the rice thoroughly in cold water until the water runs clear. Drain and set aside.
  • Step 2
  • In a large, heavy-bottomed pot or a Dutch oven, heat the vegetable oil over medium-high heat.
  • Step 3
  • Add the cubed meat and brown it on all sides until it's nicely seared. Remove the meat from the pot and set it aside.

  • In the same pot, add the thinly sliced onions and cook until they become golden brown and caramelized.
  • Step 5
  • Add the julienned carrots and continue to cook for another 5 minutes, stirring occasionally.
  • Step 6
  • Return the seared meat to the pot and add the cumin seeds, coriander seeds, paprika, ground cumin, ground turmeric, salt, and black pepper. Stir well to combine.

  • Pour in the rinsed rice and mix it with the meat and spices.
  • Step 8
  • Add the water or broth to the pot, ensuring it covers the rice mixture by about an inch. Bring it to a boil.
  • Step 9
  • Reduce the heat to low, cover the pot with a lid, and simmer for about 30-40 minutes, or until the rice is tender and has absorbed all the liquid. You can also place a clean kitchen towel or paper towel under the lid to absorb excess moisture.
  • Step 10
  • Once the Plov is done, fluff the rice with a fork and garnish with chopped fresh cilantro or parsley.

  • Serve the Central Asian Plov hot and enjoy this delicious and hearty meal!
